MARY'S SWEET POTATO HASH

2 SLICES BACON (OPTIONAL), CHOPPED
1 FRESNO CHILI, MINCED
1 MEDIUM ONION, CHOPPED
1 LARGE SWEET POTATO, DICED
1/2 TSP SALT
1/2 TSP SMOKY PAPRIKA
1-2 T BALSAMIC VINEGAR
6-10 GRAPE TOMATOES, DICED
1 OZ CHEESE, GRATED

RENDER BACON IN SKILLET.

WHEN BACON IS ALMOST DONE, ADD CHILI AND STIR FOR A MINUTE.

ADD ONION AND SAUTÉ UNTIL TRANSLUCENT.

ADD SWEET POTATO AND COOK UNTIL TENDER (AL DENTE). DO NOT STIR VERY MUCH.

ADD SALT AND PAPRIKA TO TASTE

DEGLAZE PAN WITH BALSAMIC, REMOVE FROM HEAT, AND TOP WITH TOMATOES AND CHEESE.

VARIATIONS:

SPICY SAUSAGE INSTEAD OF BACON; WITH POTATOES TOO; WITH DICED ZUCCHINI AS WELL.
