1 1/4 C FLOUR
3 T SUGAR
1/2 T GROUND FENNEL
1/2 T GROUND CARDOMOM
1 TSP LEMON ZEST
1/2 C COLD BUTTER

MIX DRY INGREDIENTS.

CUT BUTTER INTO DRY INGREDIENTS AND KNEAD UNTIL SMOOTH.

ROLL INTO 8" CIRCLE, PUT IN UNGREASED PIE PAN, AND CUT INTO 2" PIECES.

BAKE AT 325° FOR 25 TO 30 MINUTES, UNTIL EDGES START TO BROWN.

RECUT INTO 2" PIECES.

COOL.

NOTES:

YOU CAN USE PRE-GROUND SPICES, BUT USING FRESHLY GROUND SPICES IS BETTER.

THE FIRST CUTS WILL OOZE TOGETHER IN COOKING, BUT PROVIDE GUIDES FOR THE REAL CUTS. A PIZZA CUTTER WORKS GREAT.
