ABOUT A DOZEN LARGE MUSHROOMS
3 T BUTTER
1 CLOVE GARLIC, MINCED
2 GREEN ONIONS, CHOPPED
3/4 C HEAVY CREAM
2 T SHERRY OR COGNAC
SALT AND PEPPER
PARSLEY
SLICES OF WHOLE WHEAT BREAD, TOASTED AND BUTTERED

SEPARATE CAPS AND STEMS. CHOP STEMS. SLICE CAPS.

SAUTÉ CAPS IN 1 T BUTTER UNTIL GOLDEN ON ALL SIDES. PUT ON TOAST AND KEEP WARM.

SAUTÉ GARLIC IN REMAINING BUTTER; ADD ONIONS AND CHOPPED STEMS. COOK UNTIL LIMP.

ADD CREAM AND REDUCE TO 1/3 C. STIR IN SHERRY, SALT, AND PEPPER.

SPOON SAUCE OVER MUSHROOM TOAST.

GARNISH WITH PARSLEY.
