1 T BUTTER + 1 T OIL
1 TSP SALT
PEPPER
1 T HERBES DE PROVENCE
1/4 POUND CHOPPED HAM

1 C HEAVY CREAM
1 C MILK
4 EGGS, LIGHTLY BEATEN
1/4 TSP NUTMEG

1 CUP GRUYÈRE, CUBED
1/4 CUP PARMESAN, GRATED

LINE DEEP ROUND PAN WITH PASTRY.

MELT BUTTER WITH OIL OVER MEDIUM HEAT AND SWEAT LEEKS AND MUSHROOMS UNTIL SOFT. ADD SPICES AND HAM.

PUT VEGETABLES MIX IN CRUST.

TOP WITH CHEESES.

MIX CREAM, MILK, AND EGGS.

POUR CREAM MIX ONTO VEGETABLES.

BAKE AT 350° UNTIL DONE (SHARP KNIFE COMES OUT CLEAN). (~25 MINUTES)

NOTE:

YOU CAN USE BACON (COOKED UNTIL CRISP) OR PROSCIUTTO INSTEAD OF HAM.
