FANCY-ASS FRENCH TOAST

2 SLICE BACON, CHOPPED
1 T JAM
1 T BALSAMIC VINEGAR
1 EGG
1/4 C MILK
1/4 TSP CARDOMOM
1/4 TSP ALMOND EXTRACT
2 THICK SLICES STALE SOURDOUGH
1 T BUTTER

RENDER BACON UNTIL CRISPY, DRAIN ON PAPER TOWELS.

HEAT JAM ON LOW, THIN OUT WITH BALSAMIC, SIMMER TO REDUCE SLIGHTLY, AND SET ASIDE.

MIX EGG, MILK, SPICES IN SHALLOW BOWL AND SOAK BREAD ON BOTH SIDES THOROUGHLY.

REMOVE BREAD AND LET EXCESS DRIP OFF.

MELT BUTTER AND FRY BOTH SIDES OF BREAD UNTIL GOLDEN.

SPRINKLE BACON OVER TOAST, POUR JAM OVER TOP.

NOTE:

CHRISTMAS JAM IS REALLY NICE FOR THIS, BUT ANY TART BERRY JAM WILL DO TOO.
