MARINADE #1:

  1/2 C SOY
  1/2 C HONEY
  1/3 C LIME JUICE

MARINADE #2:

  1/2 C SOY
  1/3 C LIME JUICE
  1/4 C HONEY
  HANDFUL OF CILANTRO
  1 JALAPEƑO

MARINADE #3:

  1/2 C SOY
  1/4 C LIME
  1/4 C RAISINS OR DRIED APRICOTS
  1 SERRANO

BLENDERIZE ALL MARINADE INGREDIENTS IN HIGH-SPEED BLENDER.

MARINATE FLANK STEAK OVERNIGHT.

GRILL.

NOTE:

MANY OTHER VARIATIONS ARE POSSIBLE. THE BASIC FORMULA IS SALT/SAVORY + CITRUS + SWEET + SPICE/HERBS. CHIPOTLE, MINT, JAM, GINGER, SESAME, ETC. ETC. GO WILD. SOMETIMES IT HELPS TO ADD A LITTLE OIL TO THE MARINADE TO HELP WITH THE GRILLING. FLANK STEAK, CHUCK STEAK, PORK BUTT. A MIX OF BEEF AND PORK IS NICE.
