CRISPY POTATOES

1 POUND POTATOES, SLICED 1/8"
1 T BUTTER
1 T OIL
GENEROUS SALT AND PEPPER
1 ROSEMARY SPRIG
1/2 TSP GARLIC POWDER

SLICE SPUDS AND SOAK IN SALTED WATER FOR 20-30 MINUTES. DRAIN.

MELT BUTTER IN OIL OVER MEDIUM-HIGH HEAT.

LAY POTATOES IN ONE LAYER OVER PAN; GENEROUSLY SALT AND PEPPER THEM, AND BROWN ON ONE SIDE (~8-10 MINUTES). STOP! DON'T STIR THEM ABOUT: LET THEM BROWN.

TURN OVER, PEPPER THE OTHER SIDE, SPRINKLE WITH GARLIC POWDER, TOSS ROSEMARY INTO THE PAN, AND BROWN THE OTHER SIDE.

YOU CAN FINISH THEM IN THE OVEN AT 425° IF YOU OVERCROWDED THE PAN LIKE THE GREEDY BLIGHTER YOU ARE.
