WASH AND PICK OVER CRANBERRIES.

WASH AND QUARTER ORANGE.

GRATE GINGER, IF USING.

GRIND ORANGE, CRANBERRIES, AND GINGER TOGETHER IN FOOD PROCESSOR.

BRING TO STABLE TEMPERATURE IN REFRIGERATOR.

ADD SUGAR TO TASTE.

ADD PEPPER TO TASTE IF USING.

NOTES:

PEEL WILL GET BITTER OVER TIME. YOU CAN OMIT SOME OF IT OR ADJUST SUGAR ACCORDINGLY. ADJUST SUGAR AFTER MIXTURE WARMS BECAUSE YOU'LL OVERSWEETEN IT OTHERWISE. DON'T USE BOTH GINGER AND PEPPER. A PINCH OF SALT IS NICE TOO.

THIN OUT WITH A LITTLE BALSALMIC, MAKES A GOOD GLAZE FOR ANY POULTRY.
