1 LEMON, QUARTERED AND MINCED
1 LARGE ONION, FINELY CHOPPED
1 GREEN BELL PEPPER, CHOPPED
1 POBLANO, CHOPPED
1 STALK CELERY, CHOPPED
6 CLOVES GARLIC, CHOPPED
1 28 OZ CAN CRUSHED TOMATOES
1 C VEGETABLE OIL
1 C KETCHUP
2/3 C WORCESTERSHIRE SAUCE
1/4 C DRY MUSTARD
4 T BUTTER
1 T + 1 TSP RED PEPPER (CAYENNE + CHIPOTLE)
1 TSP SALT
1/2 TSP BLACK PEPPER

COMBINE ALL INGREDIENTS IN HIGH, HEAVY-BOTTOMED POT.

BRING TO BOIL OVER HIGH HEAT.

BOIL 10 MINUTES, STIRRING CONSTANTLY.

SIMMER AT LEAST 20 MINUTES MORE, STIRRING FREQUENTLY.
